Did you know March is National Flour, Noodle, and Sauce Month? While we never need a reason to indulge in a delicious bowl of pasta, this month we have been living la dolce vita and spinning our forks in some of our favourite pasta and sauce combos.
With five-days left in March, you still have time to do some serious celebrating and eating. To help you make the perfect pasta dish, we’re turning to the experts behind Dal Moro’s Fresh Pasta To Go. Originating in Venice Italy, Dal Moro’s is a fast-casual restaurant serving high-quality pastas and sauces made from authentic Italian recipes. Their first Canadian location has just opened in downtown Toronto – bringing Canadians a real taste of Italy.

START FROM SCRATCH
In a DIY mood? Making your own pasta isn’t as hard you might think. For a dough with more strength and elasticity choose a flour that is higher in protein and gluten, like Semolina. This will give the dough the consistency needed to stretch and form different noodle types.
THE PERFECT PAIRING
When selecting a pasta, you should first consider your sauce. Flat and wide pastas like fettucine are often served with heavy, meatier sauces or thick, creamy sauces, while thinner options like spaghetti are best paired with something more delicate.
To achieve an authentic Italian taste, choose or make a sauce made with fresh ingredients. For those seeking a more traditional dish, try a simple pomodoro, or creamy alfredo. For the more adventurous Dal Moro’s recommends Nero di Seppia (black squid ink sauce) or Frutti di Mare (seafood sauce).
